Ingredients

  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon ginger, minced
  • 1 bell pepper, sliced (any color you prefer)
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Green onions, sliced for garnish

Instructions

  1. In a bowl, mix together the sweet chili sauce, soy sauce, and cornstarch until well combined.
  2. Add the chicken pieces to the bowl and toss them gently to coat every piece evenly.
  3. Let the chicken marinate for about 15 minutes.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the marinated chicken to the skillet, making sure not to overcrowd the pan.
  6. Cook the chicken for about 7-10 minutes, stirring occasionally, until it’s browned and cooked through.
  7. Remove the chicken from the skillet and set it aside.
  8. In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  9. Toss in the sliced bell pepper and broccoli florets. Sauté for 5-7 minutes until they’re tender but still vibrant.
  10. Return the cooked chicken to the skillet with the sautéed vegetables.
  11. Pour any remaining marinade over the chicken and veggies.
  12. Cook for an additional 2-3 minutes until everything is heated through and well combined.
