Description

Sweet Apple Waffle Roll-Ups are a delightful breakfast treat filled with caramelized apples and cream cheese, perfect for any morning or as a sweet snack.

Ingredients

Scale
  • 2 large apples (Granny Smith or Honeycrisp), peeled and thinly sliced
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 4 large waffles (store-bought or homemade)
  • 1 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/2 cup finely chopped pecans or walnuts (optional)
  • Honey or maple syrup for drizzling (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Sauté the Apples: In a large skillet over medium heat, melt the butter. Add the thinly sliced apples, brown sugar, and cinnamon. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender and caramelized. Remove from heat and set aside to cool slightly.
  2. Prepare the Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese, vanilla extract, and powdered sugar. Beat until smooth and creamy. If you like some crunch, fold in the chopped pecans or walnuts.
  3. Assemble the Waffle Roll-Ups: Lay a waffle flat on a clean surface. Spread a generous layer of the cream cheese mixture evenly over the waffle. Place a line of the sautéed apple mixture along one edge of the waffle. Carefully roll the waffle up tightly around the apple mixture.
  4. Cook the Roll-Ups: Preheat a non-stick skillet or griddle over medium heat. Place the rolled-up waffles seam-side down and lightly press them with a spatula. Cook for about 2-3 minutes on each side, or until golden brown.
  5. Serve: Remove the roll-ups from the skillet and slice them in half for easy eating. Drizzle with honey or maple syrup, and top with whipped cream if desired.

Notes

  • These roll-ups are best served warm.
  • Feel free to substitute the apples with other fruits like pears or berries.
  • For an extra indulgent treat, add chocolate chips to the cream cheese mixture.
