- 1 lb ground beef or ground turkey
- 1/2 cup panko bread crumbs
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup soy sauce
- 2 tablespoons honey (divided)
- 2 teaspoons sriracha (divided)
- 1 tablespoon rice vinegar
- 2 cups cooked rice (white or brown)
- 1 can pineapple chunks, drained
Instructions
- In a large bowl, combine ground beef or turkey, panko bread crumbs, onion, garlic, egg, soy sauce, 1 tablespoon honey, 1 teaspoon sriracha, ginger, salt, and black pepper. Mix until just combined.
- Form the mixture into 1-inch meatballs.
- Heat a skillet over medium heat and cook meatballs for about 5-7 minutes per side until golden brown and cooked through.
- In a small bowl, whisk together soy sauce, remaining honey, rice vinegar, and remaining sriracha for the sauce.
- Serve the cooked rice in bowls topped with meatballs and pineapple chunks. Drizzle with sauce and garnish with green onions.
Notes
- For a spicier kick, increase the amount of sriracha.
- You can substitute ground turkey with chicken or pork as per your preference.
- Feel free to add more vegetables or serve with a side salad for a balanced meal.
