Ingredients
- Half a small watermelon
- 2 peaches
- 1 cucumber
- 3 tomatoes
- 2 tbsp zaatar
- A handful of pine nuts
- A handful of goji berries
- 4 sprigs of fresh basil
- Juice from one lemon
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 tsp ground black pepper
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Slice the watermelon into small triangles. Cut peaches, cucumber, and tomatoes into thin slices.
- In a small mixing bowl, whisk together lemon juice, balsamic vinegar, olive oil, sea salt, and black pepper.
- Arrange the sliced fruits and veggies on plates. Drizzle the dressing over them.
- Top with zaatar seasoning, pine nuts, goji berries, and chopped basil before serving.
