Ingredients

  • Half a small watermelon
  • 2 peaches
  • 1 cucumber
  • 3 tomatoes
  • 2 tbsp zaatar
  • A handful of pine nuts
  • A handful of goji berries
  • 4 sprigs of fresh basil
  • Juice from one lemon
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Slice the watermelon into small triangles. Cut peaches, cucumber, and tomatoes into thin slices.
  2. In a small mixing bowl, whisk together lemon juice, balsamic vinegar, olive oil, sea salt, and black pepper.
  3. Arrange the sliced fruits and veggies on plates. Drizzle the dressing over them.
  4. Top with zaatar seasoning, pine nuts, goji berries, and chopped basil before serving.
