Instructions

  • Prepare the Cookies: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Make the Filling: In a small bowl, mix together the brown sugar, cinnamon, and melted butter until combined.
  • Scoop about 2 tablespoons of cookie dough, flatten slightly, and place a small amount of the filling in the center. Cover with another flattened dough portion and seal the edges to encase the filling.
  • Arrange cookies on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are set and slightly golden. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  • Prepare the Glaze: In a small bowl, whisk together powdered sugar, milk, vanilla extract, and cinnamon until smooth.
