Description

Delicious Strawberry Pretzel Marshmallow Treats combining the crunch of pretzels, the softness of marshmallows, and the fruity flavor of strawberries.


Ingredients

  • 2 heaping cups (about 100g) regular or gluten free pretzels
  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 1/2 cup (112g) unsalted butter, plus extra for coating pan
  • 1 bag (285g) mini marshmallows, plus 1 additional cup (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups (75g) crispy rice cereal, gluten free if needed
  • 3/4 cup (18g) freeze dried strawberries, roughly crushed
  • Roasted pretzels (prepared above)

Instructions

  1. Preheat oven to 200°C. Line a large baking sheet with parchment paper. Place pretzels in a zip-top bag and crush with a rolling pin or similar object. Transfer crushed pretzels to a bowl and combine with melted butter and granulated sugar. Spread the mixture evenly on the lined baking sheet.
  2. Bake the pretzel mixture for 8 to 10 minutes or until deep golden brown. Immediately after removing from the oven, toss pretzels on the baking sheet to redistribute the butter coating. Allow pretzels to cool and crisp at room temperature.
  3. Generously butter the interior of a 20cm x 20cm (8×8-inch) baking pan. In a large bowl, combine the crispy rice cereal, freeze dried strawberries, roasted pretzels, and 1 cup of additional mini marshmallows if using.
  4. In a large pot over medium heat, melt 1/2 cup butter and the 285g bag of mini marshmallows. Stir continuously until the mixture is smooth and fully combined. Remove from heat and stir in vanilla extract and salt.
  5. Fold the dry mix into the melted marshmallow mixture, ensuring all ingredients are evenly coated. Transfer the mixture to the prepared pan and press firmly into an even layer, using greased hands or a nonstick spatula.
  6. Allow the treats to cool at room temperature for approximately one hour. Once set, slice into squares and serve.

Notes

  • Make sure to crush the pretzels well for even coating.
  • You can adjust the amount of freeze-dried strawberries to taste.
  • Optional mini marshmallows can add extra texture if desired.
