Description

Delicious waffles stuffed with creamy strawberry cheesecake filling, perfect for a delightful breakfast or dessert.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup buttermilk (or regular milk with 1 tsp vinegar to sour it)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • Cooking spray or additional butter for the waffle iron

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease with cooking spray or butter.
  2. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.
  4. Gradually add the wet ingredients to the dry ingredients. Stir until just combined; do not overmix.
  5. In a separate bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  6. Gently fold in the chopped strawberries into the cheesecake mixture.
  7. Pour a portion of the waffle batter into the preheated waffle iron, enough to cover the bottom.
  8. Spoon a dollop of the cheesecake filling over the batter, ensuring it stays in the center.
  9. Pour another layer of waffle batter over the cheesecake filling.
  10. Close the waffle iron and cook according to the manufacturer’s instructions, usually about 3-5 minutes, until golden brown and crispy.
  11. Carefully remove the waffles and let them cool slightly on a wire rack while you repeat the process with the remaining batter and filling.
  12. Slice the waffles if desired and serve warm, drizzled with syrup or whipped cream for an extra treat.

Notes

  • For an extra flavor boost, try adding a pinch of cinnamon to the dry ingredients.
  • These waffles can be made ahead of time and reheated in a toaster for convenience.
  • Feel free to substitute the strawberries with any other berry of your choice, like blueberries or raspberries.
