- 1 can (8-count) refrigerated biscuit dough
- 1 cup fresh strawberries, diced
- 1/4 cup granulated sugar
- 1 teaspoon lemon juice
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Cooking oil, for frying
- Powdered sugar, for dusting
Instructions
- In a small saucepan over medium heat, combine diced strawberries, granulated sugar, and lemon juice. Cook for 5 to 7 minutes, stirring occasionally, until the mixture thickens. Transfer to a bowl and let cool completely.
- In a medium bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth. Place the mixture into a piping bag or a zip-top bag with one corner snipped.
- Gently flatten each piece of biscuit dough with your fingers. Avoid rolling too thin, keeping enough thickness to hold the fillings after frying.
- Heat oil in a deep skillet or fryer to 350°F (177°C). Fry shaped biscuit dough in batches for 2 to 3 minutes per side, until golden brown and cooked through. Remove from oil and place on paper towels to drain any excess oil.
- Once donuts are cool enough to handle, cut a small hole in the side of each with a knife. Pipe in a portion of cheesecake filling, then follow with a spoonful of strawberry filling. Dust with powdered sugar before serving.
