Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup butter, softened
  • 1 package cream cheese (8 oz), softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 cup fresh strawberries, chopped or mashed
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, cream cheese, and sugar until light and fluffy. This may take about 2-3 minutes with an electric mixer.
  3. Add the egg and vanilla extract to the butter mixture, beating until fully combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Fold in the chopped or mashed strawberries, being careful not to overmix the dough. The strawberries should be evenly distributed throughout the dough.
  6. Scoop the dough using a tablespoon or cookie scoop and place them on the prepared baking sheet. Leave about 2 inches of space between each cookie to allow for spreading.
  7. Bake for 10-12 minutes, or until the edges are golden and the centers are slightly firm to the touch.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
