  • 2 cups (332 g) freshly diced strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
  2. In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until it resembles wet sand. Press this mixture firmly into the bottom of your prepared baking dish.
  3. In a large bowl, beat the room-temperature cream cheese until smooth. Add the eggs, granulated sugar, vanilla extract, and kosher salt, mixing until creamy.
  4. Spread the cheesecake filling evenly over the crust.
  5. Dice the fresh strawberries and scatter them evenly over the cheesecake filling.
