 - ⅓ cup (67 g) granulated sugar
 - 1 teaspoon vanilla extract
 - ¼ teaspoon kosher salt
 - 2 cups (332 g) freshly diced strawberries
 
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
 - In a medium bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until it resembles wet sand. Press this mixture firmly into the bottom of your prepared baking dish.
 - In a large bowl, beat the room-temperature cream cheese until smooth. Add the eggs, granulated sugar, vanilla extract, and kosher salt, mixing until creamy.
 - Spread the cheesecake filling evenly over the crust.
 - Dice the fresh strawberries and scatter them evenly over the cheesecake filling.
 - Bake for 35-40 minutes until the topping is golden brown and the filling is set with a slight jiggle in the center.
 - Let the bars cool on a wire rack for about an hour, then refrigerate for at least one more hour before serving.
 - Lift the bars out of the baking dish using the parchment paper, cut into squares, and serve.
