Description

Delicious strawberry brownies topped with a tangy lemon glaze.


Ingredients

  • 432 g strawberry cake mix
  • 120 g fresh strawberries, chopped
  • 80 ml lemon juice
  • 2 large eggs
  • 125 g powdered sugar
  • 15 ml lemon juice (plus additional drops as needed for consistency)

Instructions

  1. Line an 8-inch square baking dish with parchment paper and lightly grease with non-stick spray.
  2. Set oven temperature to 175°C.
  3. In a large mixing bowl, blend strawberry cake mix, chopped strawberries, lemon juice, and eggs until mixture is smooth.
  4. Pour the batter into the prepared baking dish. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow to cool in the pan for 10 minutes. Lift from pan using parchment paper and transfer to a cooling rack.
  6. In a bowl, whisk together powdered sugar and lemon juice until a smooth glaze forms. Adjust consistency with extra lemon juice if necessary.
  7. Drizzle glaze evenly over cooled brownies. Let set fully, then cut into squares for serving.
