- 432 g strawberry cake mix
- 120 g fresh strawberries, chopped
- 80 ml lemon juice
- 2 large eggs
- 125 g powdered sugar
- 15 ml lemon juice (plus additional drops as needed for consistency)
Instructions
- Line an 8-inch square baking dish with parchment paper and lightly grease with non-stick spray.
- Set oven temperature to 175°C.
- In a large mixing bowl, blend strawberry cake mix, chopped strawberries, lemon juice, and eggs until mixture is smooth.
- Pour the batter into the prepared baking dish. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes. Lift from pan using parchment paper and transfer to a cooling rack.
- In a bowl, whisk together powdered sugar and lemon juice until a smooth glaze forms. Adjust consistency with extra lemon juice if necessary.
- Drizzle glaze evenly over cooled brownies. Let set fully, then cut into squares for serving.
Notes
- Ensure the brownies are completely cool before adding the glaze for best results.
- Feel free to add more strawberries for a fruitier flavor.
