These St. Patrick’s Day Mint Chocolate Chip Cookies are soft, chewy, and bursting with cool mint flavor and gooey chocolate chips. Ingredients
Wet Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs
- 1 1/2 teaspoons peppermint extract
- 1 teaspoon vanilla extract
- Green food coloring (as needed for desired color)
Dry Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
Mix-Ins:
- 1 1/2 cups semisweet or dark chocolate chips
- 1/2 cup chopped Andes mints (optional, for extra minty flavor)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a large mixing bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy (about 2 minutes).
Mix in the eggs, peppermint extract, vanilla extract, and green food coloring until fully combined. Start with a few drops of food coloring and add more as needed to achieve the perfect St. Patrick’s Day green.
In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix!
Gently stir in the chocolate chips and chopped Andes mints if using.
Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 9-11 minutes, or until the edges are set but the centers are still slightly soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
- For a chewier cookie, chill the dough for 30 minutes before baking.
- For extra gooey cookies, slightly underbake them and let them finish setting on the baking sheet.
- For a stronger mint flavor, increase the peppermint extract by 1/4 teaspoon.
- For a bakery-style look, press a few extra chocolate chips on top of each cookie before baking.
