Description

Delicious chocolate chip cookie bars infused with festive green candy melts, perfect for St. Patrick’s Day celebrations!


Ingredients

Scale
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 large egg plus 1 egg yolk, at room temperature
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup chopped green candy melts or green M&M’s (optional for St. Patrick’s Day theme)
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 325°F (163°C). Grease or line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth.
  4. Beat in vanilla extract, egg, and egg yolk until light and creamy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips and green candy melts or M&M’s if using.
  7. Spread the dough evenly into the prepared pan and press down gently.
  8. Bake for 25-30 minutes or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow to cool completely in the pan on a wire rack before cutting into bars.

Notes

  • Make sure the butter is cooled slightly before mixing to prevent cooking the eggs.
  • For best results, use room temperature ingredients.
  • Store leftover bars in an airtight container at room temperature.
