Description
A healthy twist on a classic grilled cheese with spinach, egg whites, and feta cheese for added protein.
Ingredients

- 4 slices whole wheat bread
- 3 large egg whites
- 1 cup fresh spinach
- 1/2 cup low-fat feta cheese, crumbled
- 2 tablespoons unsalted butter, softened
Instructions
- In a nonstick pan over medium heat, scramble egg whites with spinach until eggs are set and spinach is wilted.
- Layer scrambled egg and spinach mixture and the feta cheese evenly between two slices of whole wheat bread. Top with the remaining bread slices to form sandwiches.
- Spread unsalted butter over the outer sides of each sandwich. Place in a preheated nonstick pan and cook on both sides until bread is golden and crisp and cheese is warmed through, about 3–4 minutes per side.
Notes
- Feel free to add other vegetables or seasonings to the filling for extra flavor.
- You can use any type of bread you prefer, though whole wheat adds more fiber.
