Ingredients

  • 2 cups fresh spinach, finely chopped
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 cup mashed potatoes (or 1/2 cup ricotta cheese for a creamier texture)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 large egg, beaten
  • 1/2 cup all-purpose flour

Instructions

  1. Heat olive oil in a pan over medium heat, add minced garlic and sauté for 30 seconds.
  2. Add chopped spinach and cook for 2-3 minutes until wilted, then let cool.
  3. In a large bowl, combine mashed potatoes or ricotta, mozzarella, Parmesan, salt, pepper, and smoked paprika. Stir in the cooled spinach mixture.
  4. Shape the mixture into small oval or round croquettes and place on a parchment-lined tray. Refrigerate for 20 minutes.
  5. Set up a breading station with flour, beaten eggs, and breadcrumbs. Coat each croquette in flour, dip in egg, and coat with breadcrumbs.
  6. Heat oil in a deep pan to 350°F (175°C) and fry croquettes in batches for 2-3 minutes on each side until golden brown. Drain on paper towels.
