Ingredients

  • 2 cups edamame in pods (fresh or frozen)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh lime juice
  • Salt, to taste
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. If using frozen edamame, cook them according to package instructions. If using fresh, rinse the edamame pods under cold water.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.
  4. Stir in the red pepper flakes and cook for another 30 seconds.
  5. Add the cooked edamame to the skillet, tossing to coat them in the spicy garlic oil.
  6. Drizzle the soy sauce and sesame oil over the edamame, tossing again until well combined.
  7. Squeeze fresh lime juice over the mixture, and season with salt to taste.
  8. Remove from heat and transfer the spicy edamame to a serving bowl.
  9. Garnish with sesame seeds and chopped green onions before serving.
