Description

Delicious Spicy Bacon-Wrapped Jalapeño Chicken Bites that are perfect as an appetizer or a game-day snack.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 6 fresh jalapeños, halved lengthwise and seeded
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 12 slices of bacon, cut in half
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • Toothpicks (for securing)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until well combined.
  3. Take each jalapeño half and fill it generously with the cheese mixture, using a spoon or a piping bag for easier filling.
  4. Take a piece of the diced chicken breast and press it against the cheese-filled jalapeño. Then, take a half-slice of bacon and wrap it around the jalapeño and chicken, securing it in place with a toothpick. Repeat this process with the remaining ingredients.
  5. Place the bacon-wrapped jalapeño chicken bites on the prepared baking sheet, ensuring they are not overcrowded.
  6. Bake in the preheated oven for about 25-30 minutes or until the bacon is crispy and the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  7. Once baked, remove the bites from the oven and let them cool for about 5 minutes. Serve warm as an appetizer or game-day snack!

Notes

  • For extra spice, leave some of the seeds in the jalapeños.
  • These bites can be made ahead of time and reheated in the oven before serving.
