- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 6 fresh jalapeños, halved lengthwise and seeded
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 12 slices of bacon, cut in half
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 tsp salt
- Toothpicks (for securing)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until well combined.
- Take each jalapeño half and fill it generously with the cheese mixture, using a spoon or a piping bag for easier filling.
- Take a piece of the diced chicken breast and press it against the cheese-filled jalapeño. Then, take a half-slice of bacon and wrap it around the jalapeño and chicken, securing it in place with a toothpick. Repeat this process with the remaining ingredients.
- Place the bacon-wrapped jalapeño chicken bites on the prepared baking sheet, ensuring they are not overcrowded.
- Bake in the preheated oven for about 25-30 minutes or until the bacon is crispy and the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- Once baked, remove the bites from the oven and let them cool for about 5 minutes. Serve warm as an appetizer or game-day snack!
Notes
- For extra spice, leave some of the seeds in the jalapeños.
- These bites can be made ahead of time and reheated in the oven before serving.
- Adjust the garlic and onion powder to taste if desired.
