Ingredients

  • 125 grams bread flour
  • 125 grams all-purpose flour
  • 120 grams whole milk
  • 100 grams sourdough starter
  • 30 grams unsalted butter
  • 30 grams sugar
  • 4 grams salt
  • 2 egg yolks
  • Vegetable oil for frying

Instructions

  1. In the bowl of a stand mixer, mix sourdough starter, milk, egg yolks, sugar, salt, and both flours with a dough hook on low until combined.
  2. Let the dough rest covered for 5-10 minutes, then knead on low, adding half the butter until absorbed, then add the remaining butter. Mix for about 15-20 minutes until smooth and shiny.
  3. Let the dough rise at room temperature for at least 10 hours, ideally overnight for 12 hours.
  4. Chill the risen dough in the fridge for about 2 hours.
  5. On a floured surface, divide the chilled dough into 10 pieces, roll into smooth balls, and place in a floured dish. Cover with plastic wrap.
  6. Let the dough balls proof for another 8-10 hours until nearly tripled in size.
  7. Heat vegetable oil to 360°F and fry the donuts in batches for 2 minutes on each side.
  8. Drain fried donuts on a rack with paper towels.
  9. Once cooled but still warm, sprinkle with powdered or granulated sugar.
