  • 1 cup evaporated milk
  • 0.5 cup reduced-fat sour cream
  • 1 package (225 g) reduced-fat cream cheese, cubed and softened
  • 2 cups shredded Cheddar cheese, divided
  • 1 pound (450 g) boneless skinless chicken breasts
  • 3 tablespoons crumbled cooked bacon
  • 2 cups frozen brown rice
  • 0.25 cup water
  • 2 teaspoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 4 cups reduced-sodium chicken broth, divided
  • 2 tablespoons cornstarch

Instructions

  1. Place broccoli florets, yellow onion, celery, evaporated milk, sour cream, water, Dijon mustard, garlic powder, onion powder, salt, pepper, 3.75 cups of chicken broth, and 1 cup of shredded Cheddar cheese into a 6-litre slow cooker. Stir thoroughly to combine all ingredients.
  2. Submerge chicken breasts fully into the mixture. Cover and cook on High for 4 hours or on Low for 7 hours, until chicken reaches an internal temperature of 74°C.
  3. Transfer cooked chicken to a cutting board and shred using two forks. Set aside.
  4. In a small bowl, whisk cornstarch with the remaining 0.25 cup chicken broth until smooth. Stir cornstarch slurry, softened cream cheese, frozen brown rice, and shredded chicken into the soup in the slow cooker. Cover and cook on High for 10 to 15 minutes, until rice is heated through and soup has thickened.
  5. Stir soup to combine. Divide evenly among 8 shallow bowls. Garnish each serving with remaining Cheddar cheese, scallion greens, and crumbled bacon.
