Description

A hearty and flavorful slow-cooked beef casserole perfect for summer gatherings.


Ingredients

Scale
  • 2 tbsp olive oil
  • 600 g (1.3 lbs) braising beef, chopped into chunks
  • 2 tbsp plain (all-purpose) flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cloves garlic, peeled and minced
  • 330 ml (11 oz) Guinness or other ale
  • 360 ml (1 1/2 cups) beef stock
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 small courgette/zucchini, chopped into chunks
  • 3 tbsp grated parmesan cheese

Instructions

  1. Preheat the oven to 160C/325F (fan).
  2. Heat olive oil in a Dutch oven, then coat the beef in flour, salt, and pepper. Brown the meat.
  3. Add garlic, Guinness, and beef stock to the pot. Bring to a boil, cover, and place in the oven to cook for 3 hours.
  4. After 3 hours, add chopped red and green bell peppers and courgette. Cook for an additional 5 minutes.
  5. Sprinkle finished casserole with grated parmesan cheese, parsley, and red onion, and serve with couscous.

Notes

  • This casserole pairs well with couscous or crusty bread.
  • Can substitute Guinness with any dark ale of your choice.
  • For a spicy kick, consider adding some chili flakes.
