Description

Shrimp Saganaki is a delightful Greek dish featuring succulent shrimp cooked in a savory tomato sauce with feta cheese and kalamata olives.


Ingredients

  • 1 tablespoon olive oil
  • ¼ cup shallot, chopped
  • 3 cloves garlic, chopped
  • 2 cups cherry tomatoes, halved
  • ⅓ cup kalamata olives, halved
  • pounds jumbo shrimp, peeled and deveined
  • 6 ounces feta cheese, cubed small
  • 1 lemon, zest and juice
  • ¼ cup fresh dill, finely chopped

Instructions

  1. Heat olive oil in a deep skillet. Cook shallot and garlic until fragrant, about 2-3 minutes.
  2. Add cherry tomatoes and cook until they burst, about 5-6 minutes.
  3. Add kalamata olives and a splash of water, then cook until thickened, about 2-3 minutes.
  4. Add shrimp to the tomato mixture, cover, and cook until the shrimp are pink, about 3 minutes.
  5. Stir in lemon zest, lemon juice, and dill. Top with feta cheese before serving.

Notes

  • Serve with crusty bread for dipping.
  • Adjust the amount of garlic according to your taste.
  • Can substitute shrimp with scallops for a different twist.
