Shrimp Saganaki is a delightful Greek dish featuring succulent shrimp cooked in a savory tomato sauce with feta cheese and kalamata olives.

- 1 tablespoon olive oil
- ¼ cup shallot, chopped
- 3 cloves garlic, chopped
- 2 cups cherry tomatoes, halved
- ⅓ cup kalamata olives, halved
- 1¼ pounds jumbo shrimp, peeled and deveined
- 6 ounces feta cheese, cubed small
- 1 lemon, zest and juice
- ¼ cup fresh dill, finely chopped
Instructions
- Heat olive oil in a deep skillet. Cook shallot and garlic until fragrant, about 2-3 minutes.
- Add cherry tomatoes and cook until they burst, about 5-6 minutes.
- Add kalamata olives and a splash of water, then cook until thickened, about 2-3 minutes.
- Add shrimp to the tomato mixture, cover, and cook until the shrimp are pink, about 3 minutes.
- Stir in lemon zest, lemon juice, and dill. Top with feta cheese before serving.
Notes
- Serve with crusty bread for dipping.
- Adjust the amount of garlic according to your taste.
- Can substitute shrimp with scallops for a different twist.
