- 1 pound shrimp, peeled and deveined
- 1 cup cooked rice
- 1 cup cream of mushroom soup
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 cup crushed crackers (such as Ritz)
- 2 tablespoons butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the shrimp by rinsing fresh shrimp or thawing frozen shrimp.
- In a large mixing bowl, combine shrimp, cooked rice, cream of mushroom soup, sour cream, half of the cheddar cheese, green onions, garlic powder, paprika, and black pepper.
- Transfer the mixture into a greased 9×13 inch baking dish.
- Sprinkle the cracker mixture over the top and bake for 25-30 minutes until bubbly and golden brown.
Notes
- Use fresh or frozen wild-caught shrimp for better flavor.
- Feel free to add mixed vegetables or adjust seasoning to your taste.
- Let the casserole rest for 5-10 minutes before serving.
- Leftovers can be stored in an airtight container for up to three days.
