This dish is like a warm hug on a chilly evening, filled with creamy goodness and topped with a delightful crunch. It’s the kind of meal that makes you feel at home, no matter where you are.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 cup cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1 cup crushed crackers (such as Ritz)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the shrimp by rinsing fresh shrimp or thawing frozen shrimp.
  3. In a large mixing bowl, combine shrimp, cooked rice, cream of mushroom soup, sour cream, half of the cheddar cheese, green onions, garlic powder, paprika, and black pepper.
  4. Transfer the mixture into a greased 9×13 inch baking dish.
  5. Sprinkle the cracker mixture over the top and bake for 25-30 minutes until bubbly and golden brown.

Notes

  • Use fresh or frozen wild-caught shrimp for better flavor.
  • Feel free to add mixed vegetables or adjust seasoning to your taste.
  • Let the casserole rest for 5-10 minutes before serving.
