Instructions

  1. Whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a medium mixing bowl.
  2. Beat the eggs in a large bowl, then whisk in the milk, yogurt or sour cream, melted butter, and vanilla extract until a smooth mixture forms.
  3. Fold the flour mixture gently into the wet ingredients, stirring only until just combined to preserve tenderness.
  4. Heat a large nonstick skillet or griddle over medium heat. Add butter or oil and swirl to coat the entire surface.
  5. Pour batter into the pan. As it begins setting, use a spatula to scramble and break the batter into bite-sized pieces, flipping occasionally until evenly golden and thoroughly cooked, approximately 3 to 4 minutes.
  6. Transfer cooked bites to a serving plate. Repeat with remaining batter, adding more butter or oil as needed. Serve warm with maple syrup, fresh berries, or powdered sugar as desired.
