Description

A rich and delectable sauce featuring bacon, perfect for enhancing your meals.


Ingredients

Scale
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper, to taste
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 120 ml heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon tomato paste
  • 120 ml dry red wine
  • 240 ml beef stock
  • 2 tablespoons all-purpose flour
  • 30 g butter
  • 225 g brown mushrooms, sliced
  • 1 small onion, chopped finely
  • 115 g diced bacon

Instructions

  1. Fry the diced bacon in a big pan over medium heat until it’s crisp and golden. Scoop it out but leave the fat in.
  2. Toss onions into the bacon fat, cooking for 3 minutes until they soften. Add butter and mushrooms, stirring for 5–7 minutes until they are golden.
  3. Sprinkle flour over the mushrooms and give it a good stir. Cook for about a minute while mixing.
  4. Slowly mix in beef stock and red wine, scraping up the brown bits at the bottom. Stir in tomato paste and mustard until blended.
  5. Turn down the heat, add cream, sprinkle in thyme and paprika, and let simmer for about 5 minutes to thicken.
  6. Toss the crispy bacon back in, check the salt and pepper, and let it gently cook for another 3 minutes over low heat.
  7. Sprinkle fresh parsley over everything and serve.

  • Add more cream for extra richness.

  • Use a good quality dry red wine for better flavor.
