A rich and delectable sauce featuring bacon, perfect for enhancing your meals.
Ingredients

- 1 tablespoon chopped fresh parsley
- Salt and black pepper, to taste
- 0.5 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 120 ml heavy cream
- 1 teaspoon Dijon mustard
- 1 teaspoon tomato paste
- 120 ml dry red wine
- 240 ml beef stock
- 2 tablespoons all-purpose flour
- 30 g butter
- 225 g brown mushrooms, sliced
- 1 small onion, chopped finely
- 115 g diced bacon
Instructions
- Fry the diced bacon in a big pan over medium heat until it’s crisp and golden. Scoop it out but leave the fat in.
- Toss onions into the bacon fat, cooking for 3 minutes until they soften. Add butter and mushrooms, stirring for 5–7 minutes until they are golden.
- Sprinkle flour over the mushrooms and give it a good stir. Cook for about a minute while mixing.
- Slowly mix in beef stock and red wine, scraping up the brown bits at the bottom. Stir in tomato paste and mustard until blended.
- Turn down the heat, add cream, sprinkle in thyme and paprika, and let simmer for about 5 minutes to thicken.
- Toss the crispy bacon back in, check the salt and pepper, and let it gently cook for another 3 minutes over low heat.
- Sprinkle fresh parsley over everything and serve.
Notes
- Add more cream for extra richness.
- Can be served over pasta or meat.
- Use a good quality dry red wine for better flavor.
