Description
A deliciously easy sheet pan recipe featuring sausage and sweet potatoes complemented by a honey garlic sauce.
Ingredients

- 1 (14 oz) sausage link (turkey, chicken, or beef), sliced
- 2 sweet potatoes, diced into cubes
- 2 bell peppers, chopped (any colors)
- ½ red onion, thinly sliced
- 2 garlic cloves, minced
- 1–2 tbsp Italian seasoning
- 1–2 tbsp olive oil
- ½ cup mayonnaise
- 2–3 garlic cloves, minced (for aioli)
- 1 tbsp fresh lemon juice
- ¼ tsp salt (for aioli)
- ⅛ tsp black pepper (for aioli)
Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine sweet potatoes, bell peppers, red onion, minced garlic, Italian seasoning, and olive oil. Toss to coat.
- Spread the veggies out on the baking sheet and roast for 15 minutes.
- Remove from oven, add sliced sausage to the sheet pan, and toss everything together.
- Return to oven and roast for another 15–20 minutes, or until veggies are tender and sausage is browned.
- Meanwhile, in a small bowl, whisk together mayo, garlic, lemon juice, salt, and pepper to make the aioli.
- Serve the roasted sausage and vegetables with a drizzle of garlic aioli or as a dip on the side.
Notes
- You can use any type of sausage you prefer.
- The garlic aioli can be made in advance and stored in the refrigerator.
