Description

Sausage Egg Cheddar Roll-Ups are a tasty treat!


Ingredients

  • 1 package breakfast sausage
  • 6 large eggs
  • 60 ml milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons unsalted butter
  • 120 g shredded cheddar cheese
  • 6 large flour tortillas

Instructions

  1. Heat a large skillet over medium heat.
  2. Crumble breakfast sausage into the skillet and cook, stirring occasionally, until browned and fully cooked through, approximately 5 to 7 minutes.
  3. Transfer cooked sausage to a paper towel-lined plate to drain excess fat.
  4. In the same skillet, melt unsalted butter over medium-low heat.
  5. Crack eggs into a bowl. Add milk, salt, and black pepper. Whisk until fully combined and smooth.
  6. Pour egg mixture into the skillet with melted butter. Allow eggs to begin setting at the edges before gently stirring with a spatula from the edges toward the center. Continue cooking, stirring occasionally, until eggs are softly set and creamy.
  7. Remove skillet from heat. Stir in cooked sausage and shredded cheddar cheese until evenly incorporated.
  8. Place flour tortillas on a flat work surface. Divide the egg, sausage, and cheese mixture evenly among the tortillas, placing the filling in the center.
  9. Fold in the sides of each tortilla and roll up tightly from bottom to top to enclose the filling.
  10. If desired, heat a nonstick skillet over medium heat. Place roll-ups seam side down and toast until the tortillas are golden and crisp, about 1 to 2 minutes per side.
  11. Serve roll-ups warm.
