Sausage Egg Cheddar Roll-Ups are a tasty treat!

- 1 package breakfast sausage
- 6 large eggs
- 60 ml milk
- 0.5 teaspoon salt
- 0.5 teaspoon ground black pepper
- 2 tablespoons unsalted butter
- 120 g shredded cheddar cheese
- 6 large flour tortillas
Instructions
- Heat a large skillet over medium heat.
- Crumble breakfast sausage into the skillet and cook, stirring occasionally, until browned and fully cooked through, approximately 5 to 7 minutes.
- Transfer cooked sausage to a paper towel-lined plate to drain excess fat.
- In the same skillet, melt unsalted butter over medium-low heat.
- Crack eggs into a bowl. Add milk, salt, and black pepper. Whisk until fully combined and smooth.
- Pour egg mixture into the skillet with melted butter. Allow eggs to begin setting at the edges before gently stirring with a spatula from the edges toward the center. Continue cooking, stirring occasionally, until eggs are softly set and creamy.
- Remove skillet from heat. Stir in cooked sausage and shredded cheddar cheese until evenly incorporated.
- Place flour tortillas on a flat work surface. Divide the egg, sausage, and cheese mixture evenly among the tortillas, placing the filling in the center.
- Fold in the sides of each tortilla and roll up tightly from bottom to top to enclose the filling.
- If desired, heat a nonstick skillet over medium heat. Place roll-ups seam side down and toast until the tortillas are golden and crisp, about 1 to 2 minutes per side.
- Serve roll-ups warm.
