- 1 package (10 oz) marshmallows

- 1 1/2 cups sweetened shredded coconut
- 1/2 cup caramel sauce
- 1/2 cup chocolate chips
- 1 tablespoon coconut oil (for the chocolate drizzle)
Instructions
- In a large pan, melt the butter over low heat. Add the marshmallows and stir until melted and smooth.
- Remove from heat and stir in the vanilla extract.
- Slowly add the Rice Krispies cereal to the marshmallow mixture, stirring until completely coated.
- Spread the mixture into a greased 9×13-inch baking dish, pressing it down gently to form an even layer.
- Toast the shredded coconut in a dry skillet over medium heat for about 3–4 minutes until golden brown. Be sure to stir often to avoid burning.
- Once toasted, spread the coconut evenly over the Rice Krispies layer.
- Drizzle the caramel sauce over the coconut layer, then let the bars set at room temperature for about 15 minutes.
- In a small microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring in between, until smooth.
- Drizzle the melted chocolate over the caramel-coconut layer and let it set before cutting into squares.
Notes
- Make sure to stir the coconut constantly while toasting to prevent burning.
- You can substitute the chocolate chips with dark chocolate for a richer flavor.
- Store the treats in an airtight container for up to a week.
