Ingredients

- 8 oz flaked cooked salmon
- 3 cups chopped cucumber
- 3 cups chopped red bell peppers
- ¾ cup chopped red onions
- 1 medium chopped avocado
- 4 cups chopped lettuce
- 1 tbsp chopped fresh parsley
- 1.5 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a large salad bowl, combine the flaked salmon, cucumber, red bell peppers, red onions, avocado, and lettuce.
- In a mason jar, mix the lemon juice, olive oil, salt, and pepper. Shake until well combined.
- Drizzle the dressing over the salad mixture and toss gently to coat evenly before serving.
