Description

Ingredients

  • 8 oz flaked cooked salmon
  • 3 cups chopped cucumber
  • 3 cups chopped red bell peppers
  • ¾ cup chopped red onions
  • 1 medium chopped avocado
  • 4 cups chopped lettuce
  • 1 tbsp chopped fresh parsley
  • 1.5 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the flaked salmon, cucumber, red bell peppers, red onions, avocado, and lettuce.
  2. In a mason jar, mix the lemon juice, olive oil, salt, and pepper. Shake until well combined.
