For the Dough:

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (60g) almond flour
  • ½ cup (60g) shelled pistachios, finely ground
  • ½ cup (120g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ½ cup (120g) ricotta cheese
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tsp baking powder
  • ¼ tsp salt

For the Topping:

  • ¼ cup (60ml) honey (for drizzling)
  • Additional chopped pistachios (optional)

Instructions

1️⃣ Preheat the Oven

  • Preheat oven to 350°F (180°C).
  • Line a baking sheet with parchment paper.

2️⃣ Prepare the Dough

  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add ricotta, egg, vanilla extract, and almond extract. Mix until smooth.
  • Gradually add flour, almond flour, ground pistachios, baking powder, and salt. Mix until a soft dough forms.

3️⃣ Shape the Bites

  • Roll 1 tablespoon-sized portions of dough into balls.
  • Place on the baking sheet, leaving space between them.

4️⃣ Bake

  • Bake for 12-15 minutes, until edges are lightly golden.
  • Let cool on the baking sheet for 5 minutes.

5️⃣ Drizzle with Honey

  • While warm, drizzle honey over each bite.
  • Sprinkle with extra chopped pistachios (if using).

6️⃣ Cool & Serve

  • Transfer to a cooling rack and let cool completely.
  • Enjoy at room temperature!
