- 1/2 cup Chopped Nuts (optional)
- 1/2 cup Chocolate Chips (optional)
- 1 tsp Cinnamon (optional)
- Zest of 1 Lemon (optional)
Instructions
- Preheat the oven to 350°F and prepare the baking pan.
- Mix the dry ingredients in a large bowl.
- Prepare the rhubarb by dicing it into small pieces.
- Combine the wet ingredients in another bowl.
- Mix the wet and dry ingredients together, then fold in the rhubarb.
- Pour the batter into the prepared pan and bake for 60-65 minutes.
Notes
- Use fresh rhubarb for the best flavor.
- Don’t overmix the batter to keep the bread light and fluffy.
- Allow the bread to cool before slicing.
- Store leftovers in an airtight container for up to three days.
