Description

Ingredients

  • 2 cups Rhubarb, Diced
  • 1 Egg
  • 1 cup Buttermilk
  • 1/2 cup Oil
  • 1 cup Sugar
  • 2 tsp Vanilla
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 2 cups Flour
  • 1/2 cup Chopped Nuts (optional)
  • 1/2 cup Chocolate Chips (optional)
  • 1 tsp Cinnamon (optional)
  • Zest of 1 Lemon (optional)

Instructions

  1. Preheat the oven to 350°F and prepare the baking pan.
  2. Mix the dry ingredients in a large bowl.
  3. Prepare the rhubarb by dicing it into small pieces.
  4. Combine the wet ingredients in another bowl.
  5. Mix the wet and dry ingredients together, then fold in the rhubarb.
  6. Pour the batter into the prepared pan and bake for 60-65 minutes.

  • Use fresh rhubarb for the best flavor.
  • Don’t overmix the batter to keep the bread light and fluffy.
  • Allow the bread to cool before slicing.
