Description

A deliciously moist banana bread topped with fluffy float frosting, perfect for dessert or a sweet treat!


Ingredients

  • 1/4 cup sour cream or plain yogurt
  • 3 tablespoons unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 2 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract
  • 2 to 3 tablespoons cream soda or root beer, to taste
  • Maraschino cherries (optional)
  • Chocolate shavings or sprinkles (optional)

Instructions

  1. Preheat oven to 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
  2. In a medium mixing bowl, whisk together all-purpose flour, baking soda, salt, and ground cinnamon until well incorporated.
  3. In a large mixing bowl, whisk melted butter and granulated sugar until smooth. Add eggs and vanilla extract, whisking to combine. Stir in mashed bananas and sour cream or plain yogurt until thoroughly blended.
  4. Gently fold the dry ingredients into the wet mixture, stirring only until just combined. Take care not to overmix to ensure a tender crumb.
  5. Pour the batter into the prepared loaf pan. Bake for 55 to 65 minutes, or until a toothpick inserted in the center emerges clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. In a medium bowl, beat softened butter until creamy. Gradually incorporate powdered sugar, mixing until smooth. Add heavy cream, vanilla extract, and cream soda or root beer to taste, beating until the frosting is light and fluffy. Adjust soda quantity for desired flavor and texture.
  7. Once the bread is fully cool, spread the frosting evenly over the surface. Garnish with maraschino cherries and chocolate shavings or sprinkles as desired. Slice and serve.
