They’re not just a quick solution for a hectic day, but a delightful treat that gives you a boost when you need it most. Whether you’re juggling work, errands, or just trying to keep up with the kids, these energy bites are perfect for on-the-go munching. Plus, they’re packed with flavor and nutrients that will make your taste buds sing while fueling your busy lifestyle!

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup freeze-dried raspberries (or fresh raspberries, mashed)
  • 1/4 cup ground flaxseed
  • 1/4 cup chopped almonds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a medium bowl, combine the oats, almond butter, honey (or maple syrup), freeze-dried raspberries, ground flaxseed, chopped almonds, vanilla extract, and salt. Stir until everything is well combined and the mixture starts to stick together.
  2. Use your hands to roll the mixture into bite-sized balls, about 1 inch in diameter. If the mixture is too sticky, dampen your hands with water to make it easier to roll.
  3. Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to help them firm up.
  4. Once chilled, your Raspberry Almond Energy Bites are ready to enjoy! Store any leftovers in an airtight container in the fridge for up to a week.

Notes

  • Feel free to substitute the almonds with other nuts or seeds for different flavors.
  • For added sweetness, adjust the amount of honey or maple syrup to taste.
