Description
A delicious treat combining the flavors of pistachio pudding, crispy rice cereal, and dark chocolate.
Ingredients

			- 6 Tablespoons salted butter
 - 16 ounce bag mini marshmallows, divided
 - 3.5 ounce box instant pistachio pudding mix
 - 1 teaspoon pure vanilla extract
 - 6 cups rice krispies cereal
 - ½ cup dark chocolate, melted
 
Instructions
- In a large pot, melt butter over medium heat.
 - Add all but 1 cup of the mini marshmallows and continue stirring until completely smooth. Remove from heat.
 - Add dry pistachio pudding mix and vanilla extract. Fold in with spatula.
 - Add in cereal and remaining 1 cup of mini marshmallows. Mix completely.
 - Pour into a parchment paper lined 9-inch square baking dish.
 - Allow treats to cool and set at least one hour. Remove from dish and remove parchment paper.
 - Cut into 16 squares.
 - Drizzle with melted dark chocolate, allow to set for about 15 minutes.
 - Enjoy (these are great in the fridge)!

- Store in an airtight container for freshness.
 - These treats can be kept in the refrigerator for an extra crunchy texture.
