- 4 small Brie rounds (about 2 inches wide)
- 1/2 cup pistachios, finely chopped
- 1 tbsp olive oil
- Pinch of salt
- 1/4 cup fig jam
- 1 tsp balsamic vinegar
- 1 tsp honey
- Fresh thyme or microgreens (for garnish)
- Sliced figs or whole pistachios (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
- Lightly brush Brie rounds with olive oil.
- Press chopped pistachios firmly onto the top and sides.
- Bake for 10–12 minutes until Brie is soft and slightly oozing.
- Meanwhile, warm fig jam with balsamic and honey in a small pan.
- Once Brie is baked, transfer carefully to a serving plate.
- Spoon fig glaze over the tops generously.
- Garnish with herbs and extra pistachios or fig slices.
- Serve warm with crackers, crostini, or a spoon!
- Optional: dust lightly with black pepper for contrast.
