Description

A delicious slow-cooked dish featuring tender pork shoulder infused with sweet pineapple and savory sauce.

Ingredients

Scale
  • 2 pounds pork shoulder or butt, cut into chunks
  • 1 can (20 oz) pineapple pieces, juice reserved and pieces drained
  • 1/4 cup packed brown sugar
  • 1/4 cup soy sauce
  • 3 cloves garlic, finely chopped
  • 1 teaspoon freshly minced ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper, to taste
  • Chopped green onions, for topping

Instructions

  1. Grab a bowl and whisk up the pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper together.
  2. Put those pork chunks right into your slow cooker.
  3. Pop the lid on and cook everything for 6–8 hours on low or 3–4 hours on high until the pork is super soft.
  4. About an hour before you’re done cooking, toss the pineapple pieces into the slow cooker.
  5. Take the pork and pineapple out and set them aside for now.
  6. Move the leftover liquid from your slow cooker into a saucepan.
  7. Mix the water and cornstarch together in a small bowl until you get a smooth mix.
  8. Stir in your cornstarch and water mix into the saucepan liquid. Bring it to a boil and keep stirring until it thickens.
  9. Drench the pork with your pineapple-soy sauce mix in the slow cooker.
  10. Right before you dig in, sprinkle some green onions on top.
