Instructions
Step 1: Prep the Pineapple
- Drain the pineapple rings and pat them dry with paper towels. This helps the batter stick and prevents excess oil splatter.
Step 2: Make the Batter
- In a bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the egg, milk, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry, whisking until you get a smooth, lump-free batter.
Step 3: Heat the Oil
- Heat ½ cup of vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C).
Step 4: Dip & Fry
- Dip each pineapple ring into the batter, coating it completely.
- Carefully place the rings in the hot oil and fry for 2-3 minutes per side until golden brown.
- Remove with tongs or a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Notes
