Description

Golden, crispy, and bursting with tropical sweetness—these Pineapple Fritters are little bites of sunshine! 🍍 Whether you’re craving a quick snack, a unique dessert, or a fun brunch treat, these fritters are irresistibly crunchy on the outside and soft, juicy on the inside.

Ingredients

Scale

For the Batter:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • 1 large egg
  • ½ cup milk
  • ½ teaspoon vanilla extract

For Frying & Topping:

  • 1 can (20 oz) pineapple rings, drained and patted dry
  • ½ cup vegetable oil (for frying)
  • Powdered sugar, honey, or caramel (for serving)

Instructions

Step 1: Prep the Pineapple

  • Drain the pineapple rings and pat them dry with paper towels. This helps the batter stick and prevents excess oil splatter.

Step 2: Make the Batter

  • In a bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, beat the egg, milk, and vanilla extract until smooth.
  • Gradually add the wet ingredients to the dry, whisking until you get a smooth, lump-free batter.

Step 3: Heat the Oil

  • Heat ½ cup of vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C).

Step 4: Dip & Fry

  • Dip each pineapple ring into the batter, coating it completely.
  • Carefully place the rings in the hot oil and fry for 2-3 minutes per side until golden brown.
  • Remove with tongs or a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Step 5: Serve & Enjoy!

  • Dust with powdered sugar or drizzle with honey, caramel, or maple syrup.
  • Serve warm and enjoy every crispy, juicy bite!

Notes

  • Pat the pineapple dry before dipping it in batter. Too much moisture will prevent the batter from sticking and can cause oil splatter when frying.
  • Use the right oil temperature. Keep the oil at 350°F (175°C) for crispy fritters. If it’s too cool, they’ll absorb oil and become greasy; too hot, and they’ll burn before cooking inside.
  • Fry in small batches. Overcrowding the pan lowers the oil temperature, making the fritters soggy.
