Description

A delicious and easy dessert combining sweet pineapple and creamy cheese in a cobbler format.


Ingredients

  • 1 stick (1/2 cup) butter
  • 1 egg, lightly beaten
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cans (20 oz each) pineapple chunks, drained
  • 8 oz cream cheese, cut into small pieces

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the butter in a 9×13-inch glass baking dish and place it in the oven to melt. Once melted, remove from the oven.
  3. In a mixing bowl, combine the egg, milk, flour, sugar, baking powder, and salt. Whisk until smooth.
  4. Pour the batter directly over the melted butter without stirring this creates the classic cobbler layering effect.
  5. Add the pineapple chunks on top, spreading them into an even layer as best as possible.
  6. Drop the cream cheese pieces evenly over the pineapple.
  7. Bake for 45 minutes, or until the top is golden brown, the edges are bubbling, and the center is set.
  8. Let cool slightly and serve warm plain or topped with whipped cream or vanilla ice cream.
