Description

Delicious peppermint brownies topped with rich chocolate frosting and crushed peppermint candy.


Ingredients

  • ½ cup semi-sweet chocolate chips
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ½ cup unsalted butter, softened to room temperature
  • 2 cups powdered sugar
  • 1 teaspoon peppermint extract
  • 2 tablespoons milk, any variety
  • 1 cup Ghirardelli dark chocolate melting wafers, melted
  • ½ cup crushed peppermint candy

Instructions

  1. Preheat the oven to 350 degrees F. Line a 9-inch square baking dish with parchment paper and set aside.
  2. In a medium saucepan, melt butter over medium heat. Remove from heat and stir in the chocolate chips and sugar until blended.
  3. Add eggs, one at a time, stirring after each addition. Stir in vanilla extract.
  4. Add cocoa powder, flour, salt, and baking powder to the mixture. Mix just until the dry ingredients are blended. Do not overmix.
  5. Pour the batter into the prepared baking pan. Bake for 35-40 minutes. Remove from oven and allow to cool completely before adding the topping.
  6. In a mixing bowl, beat butter with powdered sugar, peppermint extract, and milk for about 3-4 minutes, scraping down the sides of the bowl as needed.
  7. Spread the frosting evenly onto the cooled brownies.
  8. Melt dark chocolate in a microwave-safe bowl for one minute. Stir until smooth and drizzle over the frosted brownies.
  9. Immediately sprinkle crushed peppermint candy over the drizzled chocolate.
  10. Allow the chocolate to set for about one hour. Slice into squares and serve.
