Description

Pecan Pie Bars Sweet Squares are irresistibly delicious treats combining a buttery crust with a sweet and nutty pecan filling.


Ingredients

  • Crust
  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cut into cubes
  • Filling
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 1 1/2 cups granulated sugar
  • 3 tablespoons unsalted butter, melted
  • 1 1/2 teaspoons pure vanilla extract
  • 2 1/2 cups pecans, chopped

Instructions

  1. Preheat oven to 350°F (177°C). Line a 10×15-inch jelly-roll pan with parchment paper, allowing an overhang for easy removal, and lightly grease the pan.
  2. In a large bowl, combine flour, 1/2 cup sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press the mixture firmly and evenly into the prepared pan.
  3. Bake the crust for 20 minutes in the preheated oven until lightly golden.
  4. While the crust bakes, whisk together eggs, light corn syrup, 1 1/2 cups sugar, melted butter, and vanilla extract in a large bowl until smooth. Stir in the chopped pecans.
  5. Remove the baked crust from the oven. Pour the pecan mixture evenly over the hot crust, spreading gently.
  6. Return the pan to the oven and bake for 25 minutes, or until the filling is set and golden.
  7. Remove the pan from the oven and cool completely on a wire rack. Once cooled, lift out using the parchment overhang and cut into squares.

Notes

  • For best results, make sure the butter is cold when mixing the crust.
  • Store leftover bars in an airtight container at room temperature.
