Description

As a passionate home cook, I find that some recipes hold a special place in my heart. The Pecan Cream Cheese Coffee Cake is one of those delightful treasures. It’s not just a cake; it’s a warm hug on a chilly morning, a sweet companion to my afternoon coffee, and a showstopper at gatherings. I remember the first time I baked this cake. The aroma wafted through my kitchen, wrapping around me like a cozy blanket. Friends and family couldn’t resist sneaking bites before it even cooled!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the cream cheese filling, we’ll need:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

And for that crunchy pecan topping:

  • 1/2 cup chopped pecans
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon

Optional Add-ons:

  • 1/2 cup chocolate chips
  • 1/2 cup dried cranberries or raisins
  • 1 teaspoon orange zest

Instructions

  1. Prepare the cream cheese filling by beating the softened cream cheese with granulated sugar and vanilla extract until smooth.
  2. Make the cake batter by creaming together softened butter and granulated sugar, then adding eggs and vanilla. Combine dry ingredients and alternate adding them with sour cream to the butter mixture.
  3. Assemble the cake layers by pouring half of the batter into a greased pan, spreading the cream cheese filling, topping with remaining batter, and sprinkling pecan topping.
  4. Bake the cake in a preheated oven for about 40 minutes or until a toothpick comes out clean.
  5. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

  • Use room temperature ingredients for better mixing.
  • Don’t rush the cooling process to maintain the cake’s shape.
  • Store leftovers in an airtight container for up to three days.
  • This cake freezes well; wrap slices and thaw when ready to enjoy.
  • Experiment with spices for added flavor.
