Description

Delicious muffins combining the rich flavor of peanut butter with sweet guava preserves, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 2/3 cup guava preserves
  • 1/4 cup roasted peanuts, chopped

Instructions

  1. Preheat oven to 350°F and line a 12-cup muffin tin with paper liners or lightly grease with butter.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together peanut butter, melted butter, and sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla extract until fully incorporated.
  5. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  6. Fill each muffin cup halfway with batter and add a generous teaspoon of guava preserves to the center of each cup.
  7. Spoon remaining batter over the preserves to cover completely.
  8. If desired, sprinkle chopped peanuts on top of each muffin.
  9. Bake for 20 to 22 minutes, or until a toothpick inserted into the edge comes out clean.
  10. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For a more intense guava flavor, add extra preserves to the filling.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to substitute almond butter for peanut butter for a different flavor profile.
