A delightful twist on classic s’mores featuring peanut butter cookies and chocolate.
Ingredients

- 250 g creamy peanut butter
- 200 g granulated sugar
- 1 large egg
- 5 ml vanilla extract
- 135 g semi-sweet chocolate chips
- 18 peanut butter chocolate chip cookies
- 9 squares dark chocolate
- 9 large marshmallows
Instructions
- Preheat the oven to 180°C and line a baking sheet with parchment paper.
- In a stand mixer bowl, add peanut butter, granulated sugar, egg, and vanilla extract. Mix until thoroughly combined. Gently fold in the chocolate chips.
- Portion approximately 1 tablespoon of dough for each cookie, roll into balls, and place onto the prepared baking sheet. Flatten each ball slightly, ensuring a 2.5 cm gap between cookies.
- Bake for approximately 10 minutes or until cookies are golden at the edges. Allow to cool completely before use.
- Place 9 cookies upside down and top each with a square of dark chocolate. Roast each marshmallow until golden and place atop the chocolate. Cover with a second cookie, gently pressing to create a sandwich.
Notes
- Ensure cookies are completely cooled before assembly to avoid melting the chocolate.
- For extra flavor, try using chunky peanut butter.
