Description

Peach Butter Swim Biscuits are a delightful combination of sweet peaches and buttery biscuits, perfect for breakfast or dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 cup canned or fresh diced peaches (drained if using canned)
  • 1/2 cup peach juice or syrup (from canned peaches or fresh puree)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pour the melted butter into an 8×8-inch baking dish.
  3. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  4. Stir in the buttermilk and peach juice or syrup until just combined. Fold in the diced peaches gently.
  5. Pour the batter over the melted butter in the baking dish. Use a spatula to spread it evenly.
  6. Use a knife to lightly score the dough into 9 equal squares (do not cut all the way through).
  7. Bake for 25–30 minutes or until golden brown on top and bubbly around the edges.
  8. Let the biscuits cool for about 10 minutes in the pan.
  9. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust consistency as needed.
  10. Drizzle the glaze over the warm biscuits. Serve immediately.

Notes

  • Ensure that the peaches are well-drained if using canned to avoid excess moisture.
  • These biscuits are best served warm for maximum flavor and texture.
