Description

A refreshing summer salad featuring ripe peaches and creamy burrata cheese, topped with fresh basil and a drizzle of balsamic.


Ingredients

Scale
  • 2 to 3 large ripe peaches, sliced
  • 1 to 2 balls burrata cheese (1 ball for 2 servings or 2 balls for 4 servings)
  • 1 handful fresh basil leaves
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar or balsamic reduction
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: 1 handful roasted or candied pepitas (pumpkin seeds)

Instructions

  1. Slice the peaches into wedges or rings, removing the pit.
  2. On a serving platter, arrange the peach slices.
  3. Break the burrata into chunks and place over the peaches.
  4. Scatter fresh basil leaves over the top.
  5. Drizzle with extra virgin olive oil and balsamic vinegar or reduction.
  6. Season with flaky sea salt and freshly ground black pepper.
  7. If desired, sprinkle with roasted or candied pepitas for added crunch.
  8. Serve immediately and enjoy!
