Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup butter at room temperature
  • 1½ cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp red gel food coloring
  • 1 tsp blue gel food coloring
  • Patriotic sprinkles (optional)

Instructions

  1. Combine flour, baking powder, and salt in a bowl, mix and set aside.
  2. In another large mixer bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs and vanilla and beat well until combined.
  4. Gradually add the flour mixture to the butter mixture, mixing until the dough is smooth.
  5. Separate the dough into three equal parts.
  6. Leave one portion plain for your white dough, wrap in plastic, and refrigerate.
  7. Color one portion red and one blue with gel food coloring, mixing thoroughly.
  8. Flatten all three portions into disks, wrap in plastic, and refrigerate for 1-2 hours.
  9. Roll each chilled dough portion to about ⅛-¼” thick between parchment paper.
  10. Stack the three colors (I did red on bottom, white in middle, blue on top).
  11. Trim edges with a pizza cutter for straight edges.
  12. For extra festive cookies, brush the outside with water and press sprinkles into the edges.
  13. Carefully roll the dough into a tight log, wrap in plastic, and chill for at least 1 hour.
  14. Preheat oven to 350°F and line baking sheets with parchment paper.
  15. Slice the log into ¼-½” thick cookies and place 2 inches apart on prepared sheets.
  16. Bake for 10-12 minutes, or until no longer shiny on top.
  17. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
