Ingredients
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup butter at room temperature
- 1½ cups granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 1 tsp red gel food coloring
- 1 tsp blue gel food coloring
- Patriotic sprinkles (optional)
Instructions
- Combine flour, baking powder, and salt in a bowl, mix and set aside.
- In another large mixer bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs and vanilla and beat well until combined.
- Gradually add the flour mixture to the butter mixture, mixing until the dough is smooth.
- Separate the dough into three equal parts.
- Leave one portion plain for your white dough, wrap in plastic, and refrigerate.
- Color one portion red and one blue with gel food coloring, mixing thoroughly.
- Flatten all three portions into disks, wrap in plastic, and refrigerate for 1-2 hours.
- Roll each chilled dough portion to about ⅛-¼” thick between parchment paper.
- Stack the three colors (I did red on bottom, white in middle, blue on top).
- Trim edges with a pizza cutter for straight edges.
- For extra festive cookies, brush the outside with water and press sprinkles into the edges.
- Carefully roll the dough into a tight log, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Slice the log into ¼-½” thick cookies and place 2 inches apart on prepared sheets.
- Bake for 10-12 minutes, or until no longer shiny on top.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
