- 100g cooked chicken breast, sliced into strips
- 200ml romaine or mixed lettuce, chopped
- 40g fresh strawberries, sliced
- 40g fresh blueberries
- 40g canned mandarin oranges, drained
- 40g canned pineapple chunks, drained
- 15g chopped almonds or pecans, toasted (optional)
- 30ml mayonnaise
- 15ml skim milk
- 8g granulated sugar
- 10ml apple cider vinegar
- 2g poppy seeds
Instructions
- Arrange sliced chicken, lettuce, strawberries, blueberries, mandarin oranges, and pineapple evenly in a large serving bowl. Add toasted chopped nuts if desired.
- Combine mayonnaise, skim milk, sugar, apple cider vinegar, and poppy seeds in a small bowl. Whisk thoroughly until smooth and well emulsified.
- Drizzle the creamy poppyseed dressing generously over the salad and serve immediately.
Notes
- To make the salad vegetarian, omit the chicken.
