Ingredients

  • 100g cooked chicken breast, sliced into strips
  • 200ml romaine or mixed lettuce, chopped
  • 40g fresh strawberries, sliced
  • 40g fresh blueberries
  • 40g canned mandarin oranges, drained
  • 40g canned pineapple chunks, drained
  • 15g chopped almonds or pecans, toasted (optional)
  • 30ml mayonnaise
  • 15ml skim milk
  • 8g granulated sugar
  • 10ml apple cider vinegar
  • 2g poppy seeds

Instructions

  1. Arrange sliced chicken, lettuce, strawberries, blueberries, mandarin oranges, and pineapple evenly in a large serving bowl. Add toasted chopped nuts if desired.
  2. Combine mayonnaise, skim milk, sugar, apple cider vinegar, and poppy seeds in a small bowl. Whisk thoroughly until smooth and well emulsified.
  3. Drizzle the creamy poppyseed dressing generously over the salad and serve immediately.
