Description

Delicious Overnight Funfetti Cinnamon Rolls that are perfect for a sweet morning surprise!


Ingredients

  • ½ cup granulated sugar
  • 1 tablespoon cinnamon
  • 8 tablespoons unsalted butter, softened and divided
  • 3 tablespoons granulated sugar
  • ¾ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • 3½ teaspoons instant dry yeast
  • 2¼ cups all-purpose flour
  • ⅔ cup rainbow sprinkles, divided, plus more for topping
  • 1 cup confectioner’s sugar
  • 3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Mix sugar and cinnamon in a small bowl and set aside.
  2. Cream butter, sugar, and salt. Add egg, milk, yeast, and flour. Mix until smooth, then fold in sprinkles. Let rise in a warm place for 1½ hours.
  3. Roll dough into a 9×12-inch rectangle, spread with butter, sprinkle with cinnamon mixture and remaining sprinkles. Roll into a cylinder and cut into 8 pieces.
  4. Place rolls in a buttered cast iron skillet, cover and refrigerate overnight. The next morning, let rise in a warm place for 90 minutes.
  5. Bake at 325°F for 32-34 minutes until golden. Cool for 15 minutes, then top with glaze made from powdered sugar, milk, and vanilla. Sprinkle with additional sprinkles.
