Delicious Overnight Funfetti Cinnamon Rolls that are perfect for a sweet morning surprise!
Ingredients

- ½ cup granulated sugar
- 1 tablespoon cinnamon
- 8 tablespoons unsalted butter, softened and divided
- 3 tablespoons granulated sugar
- ¾ teaspoon salt
- 1 large egg
- ½ cup milk
- 3½ teaspoons instant dry yeast
- 2¼ cups all-purpose flour
- ⅔ cup rainbow sprinkles, divided, plus more for topping
- 1 cup confectioner’s sugar
- 3 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Mix sugar and cinnamon in a small bowl and set aside.
- Cream butter, sugar, and salt. Add egg, milk, yeast, and flour. Mix until smooth, then fold in sprinkles. Let rise in a warm place for 1½ hours.
- Roll dough into a 9×12-inch rectangle, spread with butter, sprinkle with cinnamon mixture and remaining sprinkles. Roll into a cylinder and cut into 8 pieces.
- Place rolls in a buttered cast iron skillet, cover and refrigerate overnight. The next morning, let rise in a warm place for 90 minutes.
- Bake at 325°F for 32-34 minutes until golden. Cool for 15 minutes, then top with glaze made from powdered sugar, milk, and vanilla. Sprinkle with additional sprinkles.
