Description

This Oven-Roasted Asparagus with Parmesan and Tomatoes is a quick and easy side dish that’s full of flavor. Fresh asparagus spears are tossed with olive oil, garlic, and seasonings, then roasted to perfection alongside sweet cherry tomatoes. A generous sprinkle of Parmesan adds a savory, cheesy finish. It’s a simple, elegant way to enjoy fresh vegetables!

Ingredients

Scale
  • 1 bunch asparagus (about 1 pound), ends trimmed
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon lemon zest (optional, for freshness)
  • 1 tablespoon balsamic glaze (optional, for drizzling)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2: Prep the Asparagus and Tomatoes

  1. Trim the tough ends off the asparagus by snapping or cutting about 1–2 inches from the bottom.
  2. Place the asparagus and cherry tomato halves on the prepared baking sheet.

Step 3: Season and Roast

  1. Drizzle the olive oil over the vegetables, then sprinkle with garlic, salt, black pepper, and red pepper flakes (if using). Toss everything gently to coat evenly.
  2. Spread the asparagus and tomatoes into a single layer, making sure they aren’t overcrowded.
  3. Roast for 12–15 minutes, or until the asparagus is tender and the tomatoes are slightly blistered.

Step 4: Add Parmesan and Serve

  1. Remove from the oven and immediately sprinkle Parmesan cheese over the asparagus and tomatoes.
  2. For an extra burst of flavor, add lemon zest and drizzle with balsamic glaze if desired.
  3. Serve warm and enjoy!

Notes

  • If you prefer extra crispy asparagus, roast at 425°F (220°C) for 10–12 minutes.
  • For a softer texture, roast at 375°F (190°C) for about 15–18 minutes.
  • Use grated or shaved Parmesan for different textures. Shaved Parmesan melts beautifully on warm asparagus!
