Description

Delicious orange blossom apricot rolls that are fluffy and fragrant, perfect for elevating your baking repertoire.


Ingredients

Scale
  • 500g all-purpose flour
  • 7g instant yeast
  • 1 pinch salt
  • 250ml warm milk
  • 100g melted butter
  • 50g sugar
  • 200g apricot jam
  • 12 teaspoons orange blossom water
  • Equal parts water and sugar for glazing

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine 500g of all-purpose flour, 7g of instant yeast, and a pinch of salt.
  3. In another bowl, whisk together 250ml of warm milk, 100g of melted butter, and 50g of sugar until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  5. Knead the dough on a lightly floured surface for about 5-7 minutes until smooth.
  6. Place the dough in a greased bowl, cover with a cloth, and let rise for 1 hour, or until doubled in size.
  7. Punch down the dough and roll it out into a rectangle, about 1cm thick.
  8. Spread 200g of apricot jam evenly over the dough and sprinkle with orange blossom water to enhance the aroma.
  9. Roll the dough tightly from one end to the other, forming a log.
  10. Slice the log into 12 equal pieces and place them on the prepared baking sheet.
  11. Create a well in the center of each roll and fill it with additional apricot jam.
  12. Bake in the preheated oven for 25-30 minutes until golden brown and cooked through.
  13. Remove from the oven and let them cool before glazing with a simple syrup made from equal parts water and sugar.

  • Ensure the milk is warm but not hot to avoid killing the yeast.
  • You can adjust the amount of orange blossom water according to your preference.
