Description

A delicious and healthy One-Pot Zucchini Noodle Alfredo that transforms classic alfredo into a lighter dish using zucchini noodles.


Ingredients

  • 2 medium zucchini, spiralized
  • 1 cup cooked chicken, shredded
  • 1/2 cup light Alfredo sauce
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons chopped fresh basil

Instructions

  1. Heat a large skillet over medium heat. Add the shredded chicken and halved cherry tomatoes. Cook, stirring occasionally, until both are heated through.
  2. Add the spiralized zucchini and light Alfredo sauce to the skillet. Gently toss and simmer for 2 to 3 minutes, allowing the noodles to heat through without becoming overly soft.
